I've never really liked iced tea. I find it bitter and tastless. Cue the 90+ degree weather we're having in Rhode Island and all the time I'm spending in Japan (our side porch) and suddenly I had a Japan sized craving for it.
Thinking in terms of health, I used mint from my little herb garden (you'd laugh if you saw me use garden in the same sentence with what I'm growing!) and some nice organic strawberries.
4 cups simmering water
8 sliced up strawberries
6 bags of jasmine tea
small handful of mint leaves, crushed
Simmer this together for 3-5 mintes, depending on how strong you like your tea.
Remove tea bags
Add 4 cups cold water
two large handfuls of ice cubes
Honey to taste (after tea is chilled)
You can also add plain or flavored seltzer or another "something" if your kids have been fighting all day and your eyes are crossed by 8pm and you want to head for the Excedrin drawer (nobody we know.)
I loved the way it looked sitting on my elephant table as the kids played in the pool and I did some work (and some play), myself.
Even the kiddos drank it but with plenty of honey!
Another iced tea additive at the end of the day as the kids' last splashes (and last arguments. OMG, how my kids can argue) turn into a game of Beat the Parents as Husband gets home and the kiddos team up to bring us down.

By the way, if anyone EVER thinks of buying one of these Imtex pools and adding a saline system to it, I recommend it very, very highly. This is our second summer with one and they are sturdy, easy to set up and you wake up and roll out of bed into a cool pool of loveliness!
