Dear Bubble, I made this cake for you even though you aren't here to eat it. At ten o'clock last night I was restless with all the quiet in the house and the pounding rain outside. I'm so used to checking on you and your brother and stroking your hair while you sleep, right at this time of night, that it was tangible (that's not something that you eat, by the way) that the house was empty.
I was supposed to put in a stick and a half of butter but when I was cleaning up, I couldn't find the rest of the butter anywhere! Now, if Junior had been here I would have looked under the dining room table, sure that he was stuffing it in his mouth, enjoying the raw butter snack that he's always trying to sneak. Oh no! It must have gone into the cake - and since I added vanilla instead of rosewater, and the cake was delicious, I think I made up my very own recipe.
I felt a bit like the woman in Water for Chocolate who put tears into her cake batter since I was a little sad with missing you guys. When you're older you'll read the book and know what I mean. I didn't know if you'd like roses or just petals on top so I tried both. When you get home you can decide what to put on the cake, ok?

Vanilla Rose Gateau - Pink's Missing Butter Recipe
1. Preheat oven to 350/180
2. Grease cake pan
3. Into large bowl, stir: 1.5 C all-purpose flour, 1tbsp baking powder, 2 sticks softened butter or margarine (1 cup) , 3/4 C superfine sugar, 3 beaten eggs. 2 tsp vanilla extract. Beat until well mixed then add 3 tbsp milk.
Bake for 45 minutes or until knife comes out clean (we have a dodgy oven so this is just a guideline.)
Make any kind of buttercream icing for the top. I use the recipe that Magnolia Bakery uses because I am a slave to nineties pop culture I think it is amazing. Recipe is here. They definitely don't stiff you in the butter department! Eat with gusto and a Lipitor chaser.
